JUNE 30, 2017 BAKE

This is the bake for the fourth of July weekend, the day we celebrate the declaration of independence here in the United States of America. As such, I have chosen items that felt "American" to me.

But first - I have added pricing for individual cookies at $2 each, whereas they were previously sold only in quantities of 6 or 12. This pricing is closer to what a brick and mortar location might charge but still less expensive than e.g. Starbucks. Now, back to the menu.

The best known American bread to me is wonder bread, so where sourdough is concerned, this means sifting the wheats and making it as "plain" as possible. I have no doubt this will be some people's favorite - it is really good - and I would offer it daily in a more conventional bakery as my "Basic Country." However, generally speaking, I am much more interested in making new, unusual combinations of flours and other ingredients. Please do let me know if there a preference towards a "Basic Country" every week.

The pie is apple pie, which I hope is the non-controversial choice for the pie of the USA. I am not sure what type of apples I will be using yet, but my fall back is a combination of Granny Smith and Golden Delicious. Otherwise, I will choose an interesting varietal that is seasonally available right now.

The cookie is a celebration of smores, riffing on the classic chocolate chip by including marsmallows and homemade cinnamon toast crunch.

Finally, the viennoiserie item this week is a strawberry roll, which is a close relative of the cinammon roll. The difference is mostly in the filling, which is comprised of fresh strawberries and fresh strawberry jam, without any cinnamon to be found. The other notable difference is the frosting, which has been upgraded to a vanilla strawberry frosting.
